Salad with Snow Peas and Nectarines

The sun is shining, summer is finally here and I want to get out on the lake. To cook any time, no time to write long lines here. So very quickly a salad, butdelicious one.

For two persons


  • 500 g snow peas
  • a couple of fresh snow peas green tips
  • 2 nectarines
  • 250 g feta cheese
  • A few leaves of fresh mint


  • 2 tablespoons white wine vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon mustard
  • 1 pinch sugar
  • 1 pinch salt

You might want to blanch the snow peas in boiling water for one minutes and thenplunge into ice water, then they are a little softer. If they are still quite tender, theywould rather I eat are raw. Wash the peppers and remove any strings. Necktarineinto wedges and mix with the mint leaves and pods and leaves. Crumble the fetaover. From a dressing ingredients, stir over the salad. Done.
